Local Restaurants Opening and Booming

The poor economy isn't stopping new restaurants from popping up around town. 

Little Caesars just opened a third location last Tuesday on 19th Street, and Papa Murphy's has plans for a third North Lubbock location just months after opening two restaurants in December.  Both chain owners say while other businesses are closing up shop, they're struggling to keep up with demand.

Esther Branagan, Owner of Papa Murphy's:
"A lot of people are definitely complaining about the economy and I actually have the opposite problem.  I have to get more people to work for me and help me run the stores...it's been very incredible."

According to the Lubbock Chamber of Commerce, the Hub City has the most restaurants per capita in the U.S.
