Chicken Chili

1 lbs. chicken cut into cubes
1 chopped onion
3 tbsp vegetable oil
1 can of white beans
(I also add a can of black beans)
1 can diced tomatoes
1 can rotel tomatoes (make sure it is original or the hot---mild is for wimps)
1 cup frozen corn ( I use more; I really like corn!)
1 tsp. salt
1 tsp. cumin
1 tsp. minced garlic
tsp. celery salt (Substituted chopped celery, cook in oil with chicken and onions)
tsp. ground coriander(did not use, don't like cilantro)
tsp. pepper
Salt and pepper adjusted to taste.

Cook chicken and onions in oil. Put all vegetables in slow cooker. Cook 4-6 hours. Serve with tortilla chips or cornbread.

A  double recipe fills up a six quart crock pot.  Just so you know amounts.
